Because of olive oil's high monounsaturated fat content, it can be stored longer than most other oils as long as it's stored properly. Oils are fragile and need to be treated gently to preserve their healthful properties and to keep them from becoming a health hazard.
When choosing a storage method, remember that heat, air, and light are the enemies of oil. These elements help create free radicals, which eventually lead to excessive oxidation and rancidity in the oil that will leave a bad taste in your mouth. Even worse, oxidation and free radicals contribute to heart disease and cancer.
Our involvement in the olive oil equipment starts after the oil is delivered at the centrifuge. Automated oil collection and delivery to buffer tanks via filtration is our first step of cleaning. 
We provide complete solutions for storage, short or long term, in stainless-steel tanks starting from 1000 lt up to 150,000 lt per silo. The tanks can be equipped with temperature control system, keeping the content at steady cool temperature of less than 22 degrees Celsius thus preventing degradation of olive oil. The cooling is achieved without moving the oil and disturbing the sediment process. We provide all types of storage tanks (horizontal, vertical and silo types) as well as transport trucks.
In order to avoid any contact with air (oxidization), we offer a Nitrogen blanket system. Our complete systems are based on in line Nitrogen production using compressed air and an overpressure system on the storage vessels that ensures that an inert gas is always in contact with the oil even in the event of emptying the tank.
The stainless steel vessels provide 100% protection from any light source. Electronic systems are used for measuring the level inside the tanks. In addition the stainless steel tanks are washable via automated CIP systems that we provide especially for this industry.
